Wine played a vital role in the daily life of ancient Greeks, especially during meals and symposia, where it was consumed in abundance. Unlike modern practices, they always diluted their wine with water, sometimes even seawater, to avoid drinking it undiluted. Precise mixing ratios were crucial, typically using one part wine to two or three parts water, which could be warm or chilled depending on the season. The preservation and cooling of wine involved innovative methods such as using snow stored in straw or special cooling vessels.

Ancient Greeks often infused their wines with various aromatic herbs, including thyme, mint, and rosemary, but never resin. The winemaking process was a festive event accompanied by music and dance. Grapes were sun-dried before being pressed, and the must was fermented in large clay jars, sometimes buried underground for optimal aging. Some regions, like Rhodes and Kos, mixed must with seawater, believing it reduced intoxication and improved digestion.

Different regions had their own winemaking techniques, and Greek wines were highly valued in antiquity. The most renowned varieties included white, yellowish, black, and red wines, with older wines considered superior. Certain wines, such as those from Chios, Lesbos, and Ikaria, were especially prized. Greek wines dominated ancient markets, with exports regulated by strict laws, particularly on Thasos, to ensure quality and authenticity. The deep cultural and religious significance of wine, often linked to Dionysus, highlights its essential role in ancient Greek life.
